Hello Families,
Welcome to the jungle! So much is happening this month and the months to follow. It’s priority re-registration time for families returning for the 2018-2019 school year. For those moving on to Kindergarten and Middle School we will miss you!
Our teachers are busy preparing for the arrival of Spring. The children will be planting gardens, celebrating St. Patrick’s Day, and exploring the world of animals.
Picture Days are at the end of the month, 3/27, 28, and 29. There will be a Spring backdrop, and graduation pictures will be taken as well for our pre-k classes.
Finally, we encourage you to spend time with your family outdoors enjoying nature and exploring our fantastic San Diego county. We are truly lucky to live and learn in such a beautiful area, close to beaches, mountains, and deserts. Until next month,

Tina’s Reading Corner
This month is Dr. Seuss Month. He is definitely one of my favorite authors as his books are engaging, entertaining, and chock full of emergent literacy exposure (rhyming, beginning/ending sounds, segmentation, and more rhyming)! When you read to your child read with enthusiasm and explore all the rhyming opportunities. Some of my favorite books are:

The Cat in the Hat
Hop on Pop
The Foot Book
How the Grinch Stole Christmas
Horton Hears a Who
One fish, two fish, red fish, blue fish

Priority Re-Registration Time
It’s time to safari on in and re-register for the 2018-2019 school year. Don’t monkey around and secure your spot for the upcoming school year!
Just stop by the front desk and pick up a packet, it’sssss so easy to do. But re-registration closes on March 23rd, so be sure to stay with the herd and not be left behind.
For our friends continuing on to Kindergarten we have a form for you, too. Let us know if you will attend our school age program and how we can meet your needs.
Be sure to enjoy some of our jungle treats as well: Tiger Cub Cuties, Gator Ade, Elephant Snacks, and Gorilla Bananas!
Next year will be roaring with new learning experiences and fun filled days; we will be on safari to stay!
Reminder
Day light savings starts March 11th, remember to set your clocks one hour forward!
Traditional Irish Boxty
Irish Boxty is a traditional potato pancake meant too be served as a side dish.
Ingredients
1/2 pound potatoes, unpeeled
1 1/2 cups buttermilk
1/2 pound potatoes, peeled and grated
1 3/4 cups all-purpose flour
1 teaspoon baking soda
salt and ground black pepper to taste
2 tablespoons butter, or as needed
Directions
Preheat oven to 450 degrees F. Scrub the unpeeled potatoes and prick them several times with a fork; place onto a baking sheet.
Bake in the preheated oven until the potatoes are easily pierced with a fork, 50 minutes to 1 hour. Remove, cool, and peel. Mash the potatoes with the buttermilk. Stir in the grated raw potato, flour, baking soda, salt, and pepper.
Melt the butter in a large skillet or griddle over medium heat. Scoop the potato mixture into the skillet to make 3 inch cakes. Fry until golden and crisp, turning once, about 5 minutes per side.
Serve with butter, honey, sour cream, or along side a breakfast of eggs and fixings.
